White Christmas?

Not quite. A little early. But we will take what we can get in Middle Tennessee! This was the view from my front door this evening.

What's Cooking Wednesday: Party Food

I hosted my book club Christmas party last night and got to try a couple of new "finger food" recipes I have had in my recipe file "to try" for a while. I also got to make a tasty new party punch that is sure to put even the biggest of scrooges in a festive mood! Enjoy!!


Hot Roast Beef Party Sandwiches (Southern Living, 2007)
1/2c. finely chopped walnuts
2 (9.25-oz) pkgs. dinner rolls
2/3c. peach preserves
1/2c. Hellman's Dijonnaise Mustard (or other mayo-mustard blend)
3/4lb. thinly sliced deli roast beef, chopped
1/2lb. thinly sliced Havarti cheese

Heat walnuts in small, non-stick skillet over medium-low heat, stirring occasionally, 5-6 minutes or until lightly toasted. Remove rolls from packages. (Do not separate rolls.) Cut rolls in half horizontally, creating 1 top and 1 bottom per package. Spread preserves on cut sides of top of rolls; sprinkle with walnuts. Spread Dijonnaise on cut sides of bottom of rolls; top with beef and cheese. Sprinkle with salt and pepper to taste (optional). Cover with top half of rolls, preserves sides down, and wrap in aluminum foil. Bake at 325 degrees for 20-25 minutes or until cheese is melted. Slice into individual sandwiches.



Cheesecake Cookie Cups
24 pieces bake-n-break refrigerated Chocolate Chip Cookie Dough
2 (8 ounce) package cream cheese
1 (14oz) can Sweetened Condensed Milk
2 large egg
2 teaspoon vanilla extract
1 (21 ounce) can cherry pie filling

PREHEAT oven to 325 degrees F. Paper-line muffin cups. PLACE one piece of cookie dough in each muffin cup. BAKE for 10 to 12 minutes or until cookie has spread to edge of cup. BEAT cream cheese, sweetened condensed milk, egg and vanilla extract in medium bowl until smooth. Pour about 3 tablespoons cream cheese mixture over each cookie in cup. BAKE for additional 15 to 18 minutes or until set. Cool completely in pan on wire rack. Top with pie filling. Refrigerate for 1 hour before serving.

Red Roosters (from Blue Christmas by Mary Kay Andrews)

1/2 cup granulated sugar
1/2 cup water
1 cup frozen lemon juice concentrate
1 cup frozen orange juice concentrate
2 cups cranberry juice
2 cups vodka
4 cups ginger ale

Bring together the sugar and water to boil in saucepan over low heat, stirring until sugar dissolves. Add all juices and vodka and stir to blend. Freeze mixture in pitcher or freezer safe container. One hour before serving time, add ginger ale to pitcher. As mixture thaws, break into slush with long spoon.

Grumpy or Happy: My life with 2 dwarfs

My little sunshine smiley boy has turned into quite the serious little man here of late. I think the teething has really darkened his mood. I have heard that boys teethe much "harder" than girls and that has definitely been the case with my two kiddos. Claire just drooled a lot when she teethed, but no major mood changes or fussiness. David is just UNHAPPY when he has a little tooth about to poke through. He won't crach a smile for anyone. And who can blame him. He has gotten 6 teeth in the last 3 months. That is enough to make anyone look like this ...
... or this.
But, we still have days where he looks like this. (Yeah!) David recently found his tongue and he is quite fond of it.

What happens at Meme's house stays at Meme's house ...

... unless she takes pictures! While Will and I were in Atlanta for the SEC Championship game this past weekend, Claire and David stayed with their Meme and Poppy (my parents). Claire loves going to their house so I am sure she did not miss us one bit. Meme and Poppy snapped some cute photos while the kids were there.


Here is Claire playing dress-up with her cousin Evie. They are "best friends" according to Evie. (She told me this on Sunday.) They love to play dress-up.

and apparently rolling in the flour. Hey Meme - ever hear of an APRON? Claire looks like she had a fun time. I will not have fun washing her clothes. They always seem to get really dirty at Meme's house.

Football Highs & Lows

IRON BOWL: Alabama vs. Auburn

For any of you readers who don't know what the Iron Bowl is ... it is the annual football game between in-state rivals Alabama and Auburn. Anyone who knows anything about college football will tell you it is one of the fiercest rivalries in history. Auburn has won the last six years, so Alabama was hungry for a victory. Despite the fact that Alabama was undefeated and Auburn was having one of the worst seasons in the last decade, anything can happen in the Iron Bowl. Alabama came away with a BIG 36-0 win. What a great way to end an undefeated regular season! Of course, we were sad to make our last trip of the year to Tuscaloosa, and more sad to be out in a yucky drizzle most of the day, but the seeing the Tide stomp all over Auburn was well worth it!

This is our regular tailgate site ... what yucky conditions. Will and our friend Nikki's uncle try to help David get a satellite signal so we can watch some pre-game football.

SEC CHAMPIONSHIP GAME: Alabama vs. Florida

Will and his dad have been buying SEC championship game tickets since 2001. Will gets 2 tickets every year from his parents for his birthday because the game is always the weekend of his birthday. This is the first year Alabama has gone since we started buying the tickets. We were stoked. (Do people still say that?) Anyway, don't feel too bad for them. Every year they have sold the tickets and made a huge profit. (Will was actually a little disappointed that he was not going to get to make a big birthday purchase this year.) So, we were finally headed to Atlanta for the SEC Championship game and to celebrate Will's birthday. A special thanks to Meme and Poppy and Aunt Ashley and Uncle Jon for keeping the kids while we were gone.

Will and I had his birthday dinner on Friday night at a place called Wildfire. It is modeled after a 1940's supper club. The food was great and we had a fun time dining alone.

Saturday morning, we met up with Will's parents and did a little shopping in the area. Then we hopped on the Marta and headed downtown to the Georgia Dome for the game.

We ran into Dan Patrick of ESPN fame at the SEC fanfare area. All of Will's sports-radio-listening days finally paid off and we got to meet a sports celebrity. He was very nice and signed the special edition Sports Illustrated magazines that we had (all 3 of them) and posed for a photo.


Will and me before the game. No scoreboard pic of this game! Unfortunately, Bama was unable to pick up a win against a very tough Florida Gators team. The team played a great game and hung in there until the very end and we were very proud.


We ran into Will's best friend from high school/college at the game. After goofing around for a little while, they finally posed for a serious photo. Cory was one of my closest guy friends in high school and he was Will's roomie all 4 years at UofA and for one year of grad school at Auburn.

More "Thanks"giving pics

I know that Thanksgiving was 2 weeks ago, but I am still trying to catch-up. I couldn't leave Thanksgiving without expressing my thanks for Will's side of the family. We are thankful that they only live a couple hours away from us and we see them frequently. We are also thankful that they will keep our children during the Alabama football games. (It is very handy to drop them off on the way to Tuscaloosa.)

What's Cooking Wednesday

Today is "food day" at my work. We have this once a quarter. Other than our annual Christmas party, this is the only social thing my firm does so I feel obligated to participate. Plus, I get to eat lots of yummy food all day long. "Food day" includes both breakfast and lunch. The firm provides the main course and the associates and staff provide breakfast, sides and dessert. So ... this morning, I got up early to prepare Green Bean Casserole. I am sure that everyone has made this or at least eaten this before. It is always a good "go to" recipe for me and one that everyone should have in their recipe file. Happy Food Day!

Green Bean Casserole
8c. green beans (regular or french-style)
2 cans cream of mushroom soup
1c. milk
2t. soy sauce
1/4t. black pepper
1 (6oz) can french-fried onions

Combine green beans, soup, milk, soy sauce, pepper and 1-1/3c. onions. Pour into greased 9x13-inch casserole dish. Bake at 350 degrees for 30 minutes. Top with remaining 1c. onions and bake another 5 minutes. Yield: 12 servings.
