Last week was a monster and the blog was neglected. I was busy finishing up a big work project and taking care of 3 sicks kiddos while Will was out of town all last week. Now that he is home, we are all on the mend (I hope)!
I tried two new recipes from Pinterest last week. Both were good. Cinnamon-swirl banana bread and Chococolate Chip Cookie & Oreo brownie bars.
Here is the menu plan for this week:
Monday: Spaghetti Casserole, salad, garlic bread
Tuesday: Pecan crusted salmon (minus the flax seed and olive oil. Bake in oven at 400 degrees for 15-20 minutes instead of frying in olive oil), wild rice, steamed broccoli
Wednesday: Chili, fritos
Thursday: Slow cooker chicken fajitas (FYI, this blog has some of the best South Beach Diet/low-carb recipes), spanish rice, black beans, chips & salsa/guacamole
Friday: Crispy pork chops, oven roasted sweet potatoes, green veggie
Saturday: leftover spaghetti casserole
Sunday: Leftovers buffet!
