Menu-Plan Monday (on a Wednesday)

 
A week of vacation followed by a holiday weekend has thrown me off my game a little this week, so pardon my tardiness!
 
On Saturday, we got our first CSA box for the summer.  It contained green kale, red russian kale, swiss chard, sweet potatoes, green onions, lettuce, broccoli and strawberries  Yummy!
 
 
Here are a few meals I plan on making with our goodies.

Menu Plan Monday: April 8-14

  
I have lost my cooking mojo ... I need to get back in the game this week!!  Lots of yummy on the menu.

Breakfasts: eggs, oatmeal (nothing fancy), whole wheat buttermilk pancakes (w/chocolate chips)
 
Lunches: Egg Salad (never made this last week), sandwiches, other leftovers

Monday: leftover grilled Greek chicken, brown rice, salad w/tomatoes, feta cheese & black olives with Greek dressing

Tuesday: dinner out after soccer practice

Wednesday: Pizza night!

Thursday: Salmon in a bag, couscous, steamed broccoli

Friday: Birthday party for neighbor

Saturday: Will's parents in town to see Duck Dynasty characters speak at local fundraiser.  We will probably eat out?

Sunday: World's Best chicken, wild rice, green veggie (lunch), breakfast for dinner (dinner)

Menu Plan Monday: April 1-7


  

We have a quite a few leftovers from last week and we have lots of stuff going on at night this week so nothing too exciting on the menu plan.

Breakfasts: Banana Chocolate-chip baked oatmeal singles (Will and I both really liked these and they reheat well), tomato basil quiche (I never pulled this out of the freezer last week)

Lunches: Buffalo Chicken Quinoa salad (This was just OK but I will eat it a couple of days this week.  I'm thinking it may be better cold.  I ate it right after I cooked it last week.); Egg Salad (check out Rebecca's blog ... she is a friend who works in the Southern Living test kitchens and everything she makes is DIVINE!)

Monday: Leftover Slow cooker salsa chicken, yellow rice, green salad

Tuesday: dinner out with coupon after soccer practice

Wednesday: Pizza night or other leftovers

Thursday: School function

Friday: Leftover Brown & Maple Sugar pork tenderloin, garlic mashed red potatoes, steamed broccoli

Saturday: dinner out with friends

Sunday: World's Best chicken, wild rice, green veggie

Menu Plan Monday: March 25-31


  

Honestly, the only thing on my menu plan that I actually made last week was the Perfect Pot Roast.  It was yummy.  And it made house smell heavenly all afternoon long.  I highly recommend using the fresh rosemary and thyme because they really do make the dish.  And don't forget to add the mushrooms like I did.

Most of my menu plan will be carryovers from last week (that were carry overs from the previous week).  Eek!  I better make this stuff soon or my fresh ingredients will go bad.

Breakfasts: Banana Chocolate-chip baked oatmeal singles, tomato basil quiche

Lunches: Buffalo Chicken Quinoa salad, dinner leftovers

Monday:   Slow cooker salsa chicken, black beans & rice, green salad

Saturday: World's Best chicken, wild rice, green veggie

Sunday: Brown & Maple Sugar pork tenderloin, garlic mashed red potatoes, roasted asparagus

Menu Plan Monday: March 18-24


  

My week did not go as planned last week!  All was going good until Wednesday when I discovered I didn't have any chicken in my freezer to make our meal for Wed. night.  And the trip to the grocery store that day just didn't happen.  I quickly subbed Thursdays meal for Wednesday night but by that point, everything had kind of fallen apart!  So this week's menu will look a lot like last week's menu!

Also, at some point during the last week, we all had a stomach bug/virus at some point.  Claire had it the previous Friday/Saturday, Luke woke up with it on Sunday morning, Will got it on Tuesday and stayed pretty sick until Thursday and I started feeling queasy Thursday night.  (I had a "lite" version of it ... no real sickness, just feeling "yuck" in general.  Thank the Lord for some Zofran I had leftover from my pregnancy with Luke.)  I'm still not feeling 100% but I am getting there.

A couple of things I made last week not on the menu plan that I wanted to pass along: Sweet Potato Chips, Quinoa & Kale Mini-Quiches, Green Goddess Grilled Cheese Sandwich (I used basil pesto instead of the pesto in the recipe), and Chicken Burrito Bowls

Lunches: Buffalo Chicken Quinoa salad, Lemon Tarragon Chicken Salad

Monday: Perfect Pot Roast, potatoes, green beans, rolls

Tuesday: Leftovers

Wednesday: Slow cooker salsa chicken, black beans & rice

Thursday: Jerky Turkey Burgers, sweet potato fries

Friday: Chicken Sausage & lime kabobs, brown rice, green veggie

Saturday: Leftover, birthday party for one of Claire's friends

Sunday: Leftovers

Menu Plan Monday: February 18-24


  
For breakfast: Quinoa and Kale mini quiches (I never made these last week ... hopefully my kale is still good)

For lunch: leftover Pasta with sausage, tomatoes and cream (this was really good and very simple) and Pan-fried pork tenderloin with mustard sauce and steamed brussel sprouts, and Jerk Pineapple pork chops and cilantro lime rice.

Here is the dinner plan for the week:

Monday: Amy's amazing white chicken chili, tortilla chips

Tuesday:  Slow cooker salsa chicken, black beans & rice

Wednesday: Pizza night, salad

I will be out of town from Thursday until Sunday night on a scrabpooking retreat.  My in-laws are coming to help Will with the kids.  They will have to fend for themselves as far as food is concerned.  Ha!

Menu Plan Monday: February 11-17


  
For breakfast: Quinoa and Kale mini quiches

For lunch: leftover  Slow cooker garlic lime chicken (very good but leave salt out of recipe ... soy sauce makes it salty enough), Baked white cheddar mac & cheese w/kale & bacon (excellent) and Cilantro lime chicken enchiladas (kind of bland ... added 4T. salsa to chicken mixtures and extra can of green enchilada sauce on top).

Here is the dinner plan for the week:

Monday: Jerk Pineapple pork chops and cilantro lime rice, Hawaiian bread rolls

Tuesday: Pasta with sausage, tomatoes and cream, salad, garlic bread

Wednesday: Pan-fried pork tenderloin with mustard sauce, kale chips, baked sweet potatoes

Thursday: Amy's amazing white chicken chili, tortilla chips

Friday: Slow cooker salsa chicken, black beans & rice

Saturday: Belated Valentine's Day date night

Sunday: Leftovers!!

Menu Plan Monday: January 21-27


  

I am currently on DAY 14 of the Advocare 24-day challenge.  So far, I have felt great, had no headaches and lost 3-4 pounds. 

I'm still eating on my Italian white bean soup and homemade tuna salad for lunches.  Now that I'm through the 10-cleanse portion of the challenge, I can add in a few whole-grain items like oatmeal for breakfast and whole-wheat pitas for my tuna salad.  (I love Trader Joe's brand pitas.)

Here is the dinner plan:

Monday: Chicken taco salad (I cook chicken breasts in the crockpot with homemade taco seasoning and then shred; top lettuce with chicken, black beans, tomatoes and guacamole)

Tuesday: Ginger and cilantro baked tilapia, brown rice, green vegetable

Wednesday: Buffalo Wing Turkey burgers (with lettuce "bun"), sweet potato fries

Thursday: Spicy Orange Beef, brown rice, steamed broccoli

Friday: Eat out with a coupon or pizza night

Saturday: Dinner with Will's annual golf trip buddies and spouses

Sunday: Leftover buffet

Menu Plan Monday: January 14


 

The first menu plan of 2013. 

I am currently on DAY 7 of the Advocare 24-day challenge and Will is busy with work stuff all week (so he won't be dining with us).

So, here are a few things I will be eating.  (When I "extreme diet", I try to fix a few things I can eat on for lunch and dinner all week.)

Ginger and cilantro baked tilapia

Italian white bean soup

Chicken taco salad (I cook chicken breasts in the crockpot with homemade taco seasoning and then shred; top lettuce with chicken, black beans, tomatoes and guacamole)

Lettuce wrap turkey burgers

Chef salad ... top lettuce with hard-boiled egg (chopped), tomatoes, deli turkey

P.S. Hopefully the menu will be a little more interesting once I get thru the 10-day cleanse of my 24-day challenge.

Menu Plan Monday: November 26-December 2


 

I haven't menu planned in several weeks ... we have been traveling the last several weekends and eating things from the freezer in between.  We are actually going to be home this whole week so I thought I would try to get back into my menu planning routine. 

My sweet mother-in-law sent us home with a ton of food from the weekend (none of which involves turkey surprisingly) so all of the meals were made by her to be eaten by us.  My favorite kind!
 
Breakfasts: pumpkin pancakes; oatmeal; pumpkin chocolate chip muffins; whole-wheat biscuits w/chocolate gravy
 
Lunches: turkey sandwiches; pb&j sandwiches, leftovers, grilled chicken salad
 
Monday: Beef & cheese enchiladas, black beans, salad
 
Tuesday: Vegetable Beef Soup, cornbread muffins
 
Wednesday: Mexican beef & rice bowls, cheese quesadillas, salad
 
Thursday: roasted chicken & peppers, wild rice, green beans, whole wheat rolls

Friday: Beef & cheese enchiladas, black beans, salad (or we may have a date night ... still working on that one!)
 
We are headed down to the SEC championship game over the weekend.  I've got to come up with some kid-friendly foods for the kids and babysitter while we are gone!  I'll save that for later in the week!

We will be in and out over the weekend visiting family and going to football games ... so no cooking for me!

Menu Plan Monday: October 29


 

I haven't planned menus in 2 weeks because my husband has been out of town for new-job training in Boston.  We ate out several times (which I hate to do) due to kids' activities at night and house showing during meal times.  But, thanks to my mother-in-law, I did not have to cook much at all while hubby was gone ... she stocked my fridge full of yummy leftovers before he left. 

I did make this yummy soup for dinner one Monday night and ate leftovers for lunch all week.  Warning: It makes a ton.  I'm kind of tired of eating it now, so I may freeze the rest for later.
 
Breakfasts: whole-wheat pancakes w/chocolate chips, pumpkin pancakes
 
Lunches: Italian White Bean Soup, turkey sandwiches
 
Monday: spaghetti casserole, salad & garlic bread
 
Tuesday: Roasted chicken & peppers, rice & green beans
 
Wednesday: tomato soup & grilled cheese
 
Thursday: The world's best chicken, roasted asparagus, whole-wheat rolls 

Friday: leftover spaghetti casserole, salad & garlic bread
 
Saturday: Beef & vegetable soup (my mother-in-law's recipe), cornbread muffins

Sunday:  Almond crusted chicken, baked sweet potatoes & green beans (lunch); Leftovers for dinner!

Menu Plan Monday: October 15-21


 

The 5 dinners-in-1 hour clean eating plan was a big hit last week.  The meals were yummy and easy to prepare.  Even if you don't prepare them all at once in advance, the meal-prep is still super simple and fast.

Breakfasts: Maple Pecan Pie Bars (these are super-yummy ... my hubby and 4-year-old son both really liked them);whole-wheat pancakes w/chocolate chips, eggs & turkey bacon (for me)
 
Lunches: Italian White Bean Soup, Zoe's chicken salad, leftovers from last week
 
Monday: Pizza spaghetti casserole, garlic bread, salad
 
Wednesday: leftover turkey & white bean chili, grilled cheese sandwiches
 
Thursday: Pizza night, salad

Friday: spaghetti, salad, garlic bread
 
Saturday: Beef & veggie soup, cornbread

Sunday:  Leftovers!!

Menu Plan Monday: October 8-14, 2012


 
I rejoined 5 dinners-in-1 hour this week via this special through 100 Days of Real Food (use password REALFOOD).  Michelle now has a clean eating plan that looks yummy delish!

Breakfasts: Maple Pecan Pie Bars; Kale, bacon & cheese breakfast casserole; whole-wheat pancakes w/chocolate chips, waffle sandwiches w/cream cheese and strawberry jam
 
Lunches: Italian White Bean Soup, grilled chicken salad
 
Monday: Slow cooked beef tacos, mini corn-on-the-cob
 
Wednesday: tomato basil soup, grilled cheese sandwiches

Thursday: Cilantro-lime salmon, broccoli, brown rice

Friday: Spaghetti casserole, salad, bread sticks

Saturday/Sunday: I am out of town and my in-laws will be in town helping Will with the kids.

Menu Plan Monday: September 24-30


Most of the recipes I used the last 2 weeks came from Once a Month Mom.  I still have a few carry-overs that I never made and/or we have enough leftovers for another meal.

Lunches: leftover Ham & cheese muffins, sandwiches, Tomato soup and grilled cheese rolls

Monday: Pepperoni pizza roll, salad
 
Tuesday: BBQ chicken pizza, salad
 
Wednesday: leftover Simple stuffed peppers, corn on the cob (On a side note, the stuffed peppers took a while to make, but it makes 8 peppers.  We ate 2, saved 2 for leftovers and froze the other 4, so technically, we are getting 3-4 meals out of it.)

Thursday: breakfast for dinner (ham, swiss cheese & veggie omelet, biscuits)

Friday: Ginger cilantro baked tilapia, orzo pasta, steamed broccoli

Saturday:  Alabama football versus Ole Miss ... we are headed to the game.

Sunday: Leftovers for lunch; Arrington Vineyards with Will's bible study group

Menu Plan Monday: September 17-23


Most of the recipes I used last week came from Once a Month Mom, which is a freezer meal-planning service based upon the premise of having one BIG cooking day a month and then pulling meals from the freezer all month long.  The meal plan includes breakfast lunch and dinner.  I have never managed to pull-off the one big cooking day a month thing, but I do like the idea of having one prep day at the beginning of the week AND when making a meal, double the recipe and save the second for later.
 
All of this to say, my meal plan last week was intended to last over the course of a 2-3 weeks.  So, much of this week's meal plan will include leftovers or duplicates from things I made last week AND things I planned (and bought groceries) to make last week, but never got around to cooking.


Lunches: leftover Cilantro Lime Quinoa salad (I add diced grilled chicken), leftover Ham & cheese muffins

Monday: Caprese lasagna, salad, bread sticks 
 
Tuesday: Pizza Hut pizza (leftovers from Luke's birthday on Saturday)

Wednesday: Tomato soup and grilled cheese rolls

Thursday: Simple stuffed peppers, corn on the cob

Friday: Ginger cilantro baked tilapia, orzo pasta, steamed broccoli

Saturday:  a much needed DATE NIGHT for Will and I!

Sunday: leftover Chicken Caprese Sandwich, chips, cantaloupe

Menu Plan Monday: September 10


Wow.  It has been a while.  Our lives have been kind of crazy since July and much of our eating has been of the "fly by the seat of our pants" variety.  I am determined to get back on track!

Here is the menu plan for the week:

Breakfasts: Tomato-Basil quiche, Maple Pecan Pie Bars, Baked Apple Oatmeal and Banana Blueberry Muffins

Lunches: sandwiches, Cilantro Lime Quinoa salad (I add diced grilled chicken), Roasted Garlic Chicken Pesto Pizza, Ham & cheese muffins, grilled cheese rolls

Monday: Moe's Southwest grill (using coupons)

Tuesday: Kids' night at Chick-Fil-A (soccer practice until 6:45)

Wednesday: Chicken Caprese Sandwich, chips

Thursday: Simple stuffed peppers, corn on the cob

Friday: Ginger cilantro baked tilapia, orzo pasta, steamed broccoli

Saturday:  Luke's birthday party and Alabama football!!  (Party planning still in progress!)

Sunday: Caprese lasagna, salad, bread sticks
