What's Cooking Wednesday

Turkey and White Bean Chili
This is a South Beach Diet recipe that is delicious and very quick and easy to make. I prepared and cooked the entire meal in about 30 minutes tonight after work.

1T. extra-virgin olive oil
1 medium onion, roughly chopped
2 garlic cloves, minced
1 lb. turkey cutlets, cut into 1/2-inch pieces (can substitute chicken)
1T. chili powder (can use chipotle chili powder for a smokier taste)
1t. ground cumin
1 (15oz.) can cannellini beans, rinsed and drained (can substitute black, navy or pinto beans)
1 (14.5oz.) can Mexican diced tomatoes
1c. lower-sodium chicken broth

Heat oil in large skillet over medium-high heat. Add onion and cook, stirring occasionally, until softened. About 5 minutes. Add garlic and cook 1 minute more. Add turkey, chili powder and cumin; cook, stirring often, until turkey is no longer pink inside, about 5 minutes. Add beans, tomatoes with juice and broth; bring to a boil. Reduce heat to medium-low, cover, and simmer until flavors blend, about 15 minutes. Season with salt and pepper to taste. Top with shredded cheddar cheese. Yield: 3-4 servings.

Happy Halloween! The recipe made me want to go home and cook, even though today turned out quite warm. (When our kids were small, they always had to wear their coats over their Halloween costumes!)
