Happy March! I am so ready for spring. We grilled out twice this weekend with some spring-like weather, but we are supposed to get a dusting of snow tonight. Ugh!!
Last week we stayed on the menu plan and had some great meals. I highly recommend the honey-glazed chicken and crockpot ranch pork chops. And the grilled chicken over lemon pasta with spinach is one of my all-time favorite "fancy" meals (served with a glass of chardonney, please).
Here is the menu plan for this week:
Monday: Greek Chicken (grill chicken soaked in this marinade), salad (lettuce with cherry tomato, black olive and feta cheese mixture on top) and brown rice. Top everything with this awesome Greek dressing.
Tuesday: Kids' Night at Chick-Fil-A (Claire and David start soccer practice this week)
Wednesday: Cheese enchiladas, guacamole salad, refried black beans
Thursday: Slow cooked Asian Beef & Broccoli, rice, egg rolls
Our kiddos are visiting grandparents for the weekend so Will and I are going to be eating out with our adult dining gift certificates and groupons. We may even see a movie! Any suggestions?
